VARIMUTH GOGJI

Kashmiri Pandit cuisine is all about combinations that boosts a healthy lifestyle, builds immunity & maintains a healthy gut.  This dish is packed with flavors & is soaked in health benefits. The mix of black beans & turnip strengthens your bones, relieves digestive issues & boosts the nervous system among other health benefits. The spices used in this dish elevates the dish & takes it to the next level. A lot of people avoid turnip but combine it with black beans & some spices & you have a winning dish. 
Recipe
  • Wash & soak black beans in water for 2 hours : 250 gm
  • Wash & cut one piece of medium size turnip into four pieces
  • Put the black beans & the soaked water in the pressure cooker
  • Add Salt: 1 teaspoon, fennel powder : 2 teaspoon & ginger powder : 1/2 teaspoon
  • Half cook it for 3-4 whistles
  • In another pan pour  oil : 2 serving spoons
  • Sauté  heeng (Asafoaetida), Cumin (Zeera) ½ spoon each & add the turnips
  • Shallow fry the turnips & add Salt : 1 teaspoon
  • Roast some red chilli powder : 2 teaspoon, turmeric :1/2 teaspoon 
  • Pour water & mix throughly : 1/2 bowl 
  • After mixing everything in. the pan, add the turnip spice mix to the pressure cooker
  • Add Var Masala : 1/2 teaspoon
  • Pour a glass of water
  • Put the lid on & cook it for 2-3 whistles in high flame
  • Then cook it for another 10 minutes in low flame
  • Garnish with green chillies for flavour
  • Serve it with steamed rice
